Ingredients

Muffin

  • 1 small carrot, cut into quarters
  • 1 Red apple, cut into quarters
  • 2 eggs
  • 50 g vegetable oil, I used sunflower oil
  • 100 g raw sugar
  • 1 tablespoon cinnamon
  • 145 g Flour, Plain
  • 60 g rolled oats
  • 1 teaspoon Baking Powder.

Recipe's preparation

  1. 1. Preheat oven and prepare a muffin tin lined with muffin cases. 

     

    2. Place carrot and apple into bowl Closed lid"Closed lid" chop

    6secs/speed 5

     

    3. Scrape down bowl.

     

    4. Place eggs, oil, sugar, cinnamond into bowl Closed lid"Closed lid" mix

    8sec/speed 3.

     

    5. Place oats, flour and baking powder into bowl Closed lid"Closed lid" and mix

    5secs/speed 3. 

     

    6. Fill prepared muffin tin. See tip. 

     

    7. Bake for 15 mins or until toothpick inserted into centre of muffin comes out clean. 

     

     

     

Tip

* These muffins are not super sweet and great for kids lunch boxes or afterschool snacks. 

* You could add a handful of sultans for extra sweetness. 

* I use an ice cream scoop to fill the muffin cases which gives you an equal amount of batter for each muffin. This recipe makes 10 muffins using a standard ice cream scoop.

    Yum! I doubled everything but the sugar and used frozen feijoa vs apple, wholemeal flour vs plain, butter vs oil and coconut vs oats as that's what I had. Delicious!!

    I made this recipe using a green apple 🍏instead of red and they were perfect! I accidentally threw the apple core in as well- turns out you can use a hole apple... and iv been waisting the apple core this whole time 🤭

    This was really yummy!
    made them for my toddler in mini muffin tray. Used coconut sugar and only 50g. Added currents for a bit of sweetness.
    Will be making these again for sure!

    Delicious. Used GF flour and brushed with melted butter and sprinkled cinnamon sugar on top. Wonderful warm with some double cream.

    Very tasty.

    I used 1 large carrot, 1 very large green apple and subbed oil for butter, eggs for chia/water, wholemeal for plain flour and sugar for 80g maple syrup (was quite sweet for my taste). I tried to bake it in a loaf pan which didnt really work well, but it was tasty so i will stick to muffins next time.

    Oats can be replaced with shredded coconut and flour with gf flour, for a gf version

    I make these ALL the time. I play around with the sugar and find they are sweet without being terrible for you with 30g of sugar or dates. Great lunch box and after school snack.

    I made them this afternoon... all I did differently was add 3/4 of a pear and used coconut oil and wholemeal flour.

    I've already given the neighbour the bad news that she has to go back to the drawing board Big Smile

    Made these this morning for school lunch's, made some in muffin tin and some in silicone mini loaf tin.  I used coconut oil instead of vegetable.

    I doubled the mixture as well to try and get rid of some carrots lol
