- 2 spring onions
- Small handful of fresh basil
- Small handful of Fresh Coriander leaves
- 2 small eggs
- 2 cups Cooked Quinoa
- 40 g parmesan, Grated for 15 sec/speed 10
- 100 g Breadcrumbs or Flour, I used 2 slices of multigrain bread milled for 8 secs/speed 4
- 100g feta cheese

1. Preheat oven 200c and prepare muffin tin with muffin liners.
2. Place spring onions, basil and coriander in bowl "Closed lid" . Chop
5 secs/speed 5
3. Place quinoa, eggs, parmesan, feta and bread crumbs or flour into bowl "Closed lid" mix
10sec/speed 4/"Counter-clockwise operation" .
4. Fill muffin liners.
5. Bake for 15 mins or until brown on top.
Muffins
Tip
This recipe makes 10 large muffins and about 24 mini muffins. I like to make the mini muffins for lunchboxes. Just remember to reduce the cooking time in the oven for the mini.
These freeze really well. Make sure they have completely cooled before placing in the freezer.
You can also make these into patties and fry them in some oil. It is a little more work but the results are great.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Easy to make and quite versatile with what could be added. We enjoyed these warm for lunch with salad, relish and Greek yoghurt. Tasty.
Yummy...used fresh marjoram instead of coriander...easy to make GF...love it even my picky daughter ate it!! )
