Banana Blueberry Muffins
- 280g Ripe bananas ( 3 to 4 bananas)
- 150g white sugar
- 1 egg
- 75g melted unsalted butter
- 180g fresh blueberries
- 1 tsp baking soda
- 1 tsp baking powder
- 185g plain flour
- 1/2 tsp salt

I'm cooking this todayRecipe's preparation
- 1. Preheat oven to 180c ff and prepare a muffin tin, greased or use silicone muffin tin
- 2. Add 280g ripe bananas cut in half into the mixing bowl and mash/Mix 3 sec / speed 5. Scrape the sides of the mixing bowl.
- 3. Add 150g white sugar, 1 egg, 75g melted butter and Mix 3 sec / speed 5. Scrape the sides of the mixing bowl.
- 4. Add 185g plain flour, 1 tsp baking soda, 1 tsp baking powder, 1/2 tsp salt and Mix 5 sec / speed 5. Scrape the sides of the mixing bowl then add 180g fresh blueberries and gently fold into the batter with a spatula.
- 5. Divide the batter into the prepared muffin tin, can add a few extra blueberries on top and Bake in preaheat oven at 180c for 20min.
- 6. Let the muffins cool in the muffin tin for about 10 minutes before taking out to serve. Can dust the muffins with some fine icing sugar once cooled.
