Ingredients
Banana, Date and Cardamom Muffins
- 1 teaspoon cardamom pods, (approximately 20 cardamom pods)
- 4 Pitted Dried Dates
- 1 large banana
- 1 egg, (see tips below for a good egg substitute)
- 1/2 --- cup of rice milk, (or preferred milk)
- 1 cup of white spelt flour
- 2 teaspoons baking powder
- extra virgin olive oil, (optional)

Pre-heat the oven to 200°C and grease or line a 6-hole muffin pan.
Place the cardamom pods into mixing bowl and mix 3 sec/speed 7 and empty mixture into a bowl. Transfer to seperate bowl and pick out all of the shells.
Discard the shells and add the cardamom seeds into mixing bowl chop 5 sec/speed 7.
Add the dates and chop for 5 sec/speed 7.
Add the banana, egg and rice milk and blend for 5 sec/speed 5.
Add the flour and baking powder and mix for 10 sec/speed 3.
Pour into muffin pan and bake for 15 minutes.
After removing them from the oven drizzle a small amount of olive oil on the top of each muffin and let sit for 5 minutes before transferring them to a wire rack to cool.
Banana, Date and Cardamom Muffins
Tip
Chia seeds would work really well for egg free muffins. Just combine 1 tablespoon of chia seed meal with 3 tablespoons of luke-warm water. Whisk with a fork and let sit for 5 – 10 minutes until it develops a texture similar to raw egg.
