Ingredients

  • 1 chicken breast, cut into thick slices, (this is enough for our family of 3 so feel free to add more)
  • 50 grams extra virgin olive oil
  • 2 cloves of garlic
  • 380 grams arborio rice
  • 200 grams dry white wine
  • 800 grams water
  • 2 tablespoons TM vegetable stock concentrate
  • 2 tomatoes, finely chopped
  • 1 tablespoon tomato puree
  • finely grated rind of 1 orange
  • 80 grams orange juice (approx 1 orange)
  • 2 medium zucchini, sliced into 5mm rounds
  • 1 handful of basil leaves, torn
  • shaved or grated pecorino cheese to serve (substitute with Parmesan cheese)
  • Himalayan salt and black pepper
  • 1 Large Brown Onions
  • 1 sprig of rosemary (leaves only)

Recipe's preparation

  1. Add the garlic and rosemary leaves to TM bowl and chop for 2-3 seconds on speed 7.
    Add the onion and chop for 2 seconds on speed 7.
    Add 50g of olive oil and saute for 4 minutes at 100.C on speed 1.
    Add arborio rice and white wine.
    Saute for 2 minutes at 100.C on Reverse + speed 1.
    Add the chicken to the Varoma.
    Add stock, sliced zucchini, tomato, tomato paste, orange zest, orange juice and water to the TM bowl and cook for 16 minutes at Varoma tempetature on Reverse + speed 2.
    Season the risotto well with Himalayan salt and freshly ground black pepper. Pour into the Thermoserver. Finely shred the chicken, add to the risotto and stir through half of the basil leaves before allowing to rest for at least 5 minutes.
    Garnish with plenty of freshly ground black pepper, shaved pecorino cheese and the remaining basil leaves.

Tip

For a dairy free option replace the cheese with the juice of 1/2 - 1 (depending on taste) lemon before serving.

    We really enjoyed this recipe. I oven baked two chicken breast drizzled with olive oil so they stayed moist, then shredded and stirred through at the end. I also added a few extra vegetables. We will definitely be making this one again.

    Based on comments above I reduced the water and rice proportionately - I used 320g rice, 200g wine (why would you want to cut that back!!) 65g juice (1/2 an orange), and 640g water. The only problem was I probably didn't have enough fluid as I cooked it for 22 minutes as I had close to 600g chicken in the Varoma, so it was a bit gluggy through overcooking on my part. I tipped the contents into the thermoserver, then popped the cooked chicken into the bowl and shredded it for 6 seconds, reverse speed 4, and it was brilliant and time saving! Will try again with more water, as I liked having a lot of chicken in it.

    Very tasty, this was the first hot dish I attempted in my thermomix (received mine last night) I had to leave chicken cooking for lot longer than instructions (I may have had too much chicken steaming) was very happy with the taste as this was also my first time cooking a risotto.  My one year old loved it tmrc_emoticons.)

    Absolutely delicious dish.  The ingredients are enough to feed 5 or 6 easily.

    Have cooked this dish for several people and always enjoyed.

    Very rich, and made enough to feed about a family of 6! Maybe I'll cut back on the Orange next time.

    Great delicious little dish.

    Also could not add all trhe water, but thats OK, wife and i enjoyed it immensely.

    Too much for just the 2 of us and will halve it next time.

    Yumm thank you, hubby and I enjoyed this a lot. Couldn't add the full water amount to the jug though as it hi max level at about 650ml and had to add an extra 5 mins at the end as the chicken was still pink but it all worked well and tastes amazing.
