Ingredients

Banana Sponge Roll

  • 1 self-raising flour, 1 cup
  • 1 tablespoons cornflour
  • 1/2 teaspoon ground cinnamon, 1/2 teaspoon
  • 1/2 teaspoon mixed spice, 1/2 teaspoon
  • 5 eggs
  • 1 caster sugar, (1 cup)
  • 1 cocoa powder, 70% cocoa, Dessert spoon

Filling

  • 600 grams cream
  • 2 tablespoons sugar
  • 1 teaspoons vanilla essence
  • 2 bananas, (Ripe but firm)

Recipe's preparation

    Banana Sponge Roll
  1. Preset oven 220 degrees

    place clean tea towel on cooling rack (sprinkle with sugar)

    line baking tray with paper (I just place a thermomix baking mat liner in tray and grease edges with butter)
  2. Set aside 1 cup castor sugar.

    Mix remaining dry ingredients, sift and set aside. 1 cup SR flour, 1 tablespoon corn flour, 1/2 teaspoon cinnamon 1/2 teaspoon of mixed spice, dessert spoon cocoa.
  3. Add butterfly whisk to bowl.
    Add 5 eggs
    2 mins/38 degrees/speed 4
  4. Slowly add cup of castor sugar while mixing.
    2 mins/38 degrees/speed 4
  5. Remove whisk
    Use spatula to lightly fold through sifted dry ingredients.
  6. Pour batter into lined tray.
    bake 10-12 mins.
    If cooked sponge should spring back when touched.
  7. Turn sponge out onto sugared tea towel.
    Gently roll with tea towel, unroll.
    repeat then allow to cool flat.
  8. Whip cream, sugar and vanilla essence
    A chilled bowl assists whipping.
    butterfly whisk, speed 4 till firm peaks form. WATCH
  9. When cool spread with cream.
    Peel banana, cut ends, lightly bend to flat.
    Place banana along narrow side edge and roll.
    Cut and serve.
