Ingredients

Blueberry & Chia Seed Muffins

  • 1 tablespoon Black Chia seeds
  • 100 grams water
  • 110 grams raw sugar
  • 120 grams raw almonds
  • 125 grams Butter, cubed
  • 2 eggs
  • 170 grams self-raising flour
  • 170 grams Frozen Blueberries

Recipe's preparation

    Blueberry & Black Chia Seed Muffins
  1. 1. Preheat oven to 160 degrees. Grease a muffin pan of your choice: mini, regular or jumbo.

     

    2. Place chia seeds in a small bowl & add 1 MC of water (100g). Stir to combine & set aside.

     

    3. Add sugar to TMX bowl & mill 5 sec/sp9.


    4. Add almonds & mill 5 sec/sp9. Set aside in a medium bowl.

     

    5. Add cubed butter to TMX bowl & melt 1-2mins / 50 degrees / sp3 (or until melted).

     

    6. Add eggs & chia seed mixture (this will have turned into a gel). Mix b5 sec / sp3.

     

    7. Add reserved almond meal & sugar plus flour. Mix  5 sec / sp5 until just combined - do not overmix!

     

    8. Set aside in the bowl that formerly held the sugar & almond mixture while you weigh the blueberries into the TMX bowl.  Gently fold the blueberries into the batter with the spatula.

     

    9. Spoon into the prepared muffin pan, filling 2/3.

     

    10. Bake time will vary between 20-45mins, depending on the size of the muffins you're making.

Tip

White chia seeds may be used instead of black (especially if your children are fussy about black spots in their food!).


May be frozen.


Try using raspberries instead of blueberries.


Wholemeal flour may be used instead of white.

    Delicious!!
    This is my go to recipe now for blueberry muffins. Ive made them quite a few times now and they are perfect every time. Have just substituted with frozen cherries this morning so hoping they are just as good tmrc_emoticons.)

    Really great recipe. I added the blueberries and spoon mixed them a couple of seconds. And added vanilla. Really yum

    These were really delicious - a great balance of healthy and yummy.

    The chia seeds are a great addition - what a great idea.

    I got 15 out of my mix with small silicone moulds.

    The baby and toddler were bribed with frosting to eat the first one and now love them without.
