Ingredients

Batter

  • 125 g Coconut or Almond Flour
  • 40 g Vanilla Whet Protein Powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp Himalayan salt
  • 65 g Rapadura Sugar
  • 1 tsp vanilla extract
  • 65 g olive oil
  • 1 tsp Apple Cidar Vinegar
  • 240 g Almond or Coconut Milk
  • 2 large eggs
  • 150 g Fresh Bluberries

Recipe's preparation

  1. Pre Heat Over 180 degrees 

    Grease Muffin Tray

  2. Add dry ingredients: Flour, Protein Whey, Baking Powder, Baking Soda, Salt, Cinnamon.

    Mix together Spped 6 for 10 Seconds

  3. Add wet ingredients: Milk, Vanilla, Oil, and Eggs.

    Mix together Speed 6 for 6 Seconds

  4. Fill your muffin tray to 3/4 full and bake in the oven for 20-25 minutes.

     

  5. Allow to cool and enjoy tmrc_emoticons.-)

     

Tip

Flour - You can use any flour you like (Almond, Coconut, Spelt, Emmer, Buckwheat etc)

Milk - You can also use what ever is your prefered choice (Almond, Coconut, Soy, Rice etc)

I use Rapadurs Sugar because it is 100% unrefined Sugar Cane, Naturally Dried with NO Chemicals or Anti-Caking agent. It also has a lovely caramel flavour.

Himalayan Salt contains 84 minerals and trace minerals including iodine. Table salt or white salt is missing over 80 minerals. An interesting fact I found out when we crave junk food its because we are lacking in minerals.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
