Ingredients

Cupcake Mixture

  • 90 gram Butter
  • 75 gram plain flour
  • 75 gram Self Raising Flour
  • 100 gram brown sugar
  • 1/4 teaspoon bicarb soda
  • 60 gram Milk
  • 35 gram golden syrup
  • 1 egg
  • 2 teaspoon vanilla extract
  • 95 gram Milk choc chips

Chocolate Ganache Icing

  • 200 gram dark chocolate
  • 80 gram cream

Recipe's preparation

    Cupcake Mixture
  1. Preheat oven to 180C and line muffin pan with cupcake cases.


    Place butter in bowl and soften for 30 seconds at 50C on speed 3 (if butter room temperature you don't need to do this).


    Add all ingredients EXCEPT CHOC CHIPS and set timer for 3 minutes on speed 4, stopping to scrape sides of bowl once.


    Add choc chips and mix for 5 seconds counter-clockwise operation speed 2.


    Spoon mixutre into cupcake cases and bake for 20 minutes.


    Wash TM bowl and dry.


     

  2. CHOCOLATE GANACHE
  3. Add chcoolate and mill for 8 seconds on speed 8.  Add cream and cook for 3 minutes at 80C on speed 2.


    Place ganache in bowl and put in fridge to cool for approx 30 minutes.


    Ice cupcakes with chocolate ganache.

Tip

The cupcakes are also delicious with no ganache.

    My kids dont eat a lot of cake, but they adore these. They prefer them without icing, and I don't think they need icing as they are pretty sweet.

    Thsee cakes are yum and easy. I didn't bother with the icing.

    yum! My 7 year old daughter made these this morning, they are all gone. we did not worry about icing them and we used white choc chips

    I made these this morning for my kids and they are very yummy!! I used choc melts instead of choc chips so the chocolate melted through the cupcakes. We also had them without the icing and they were still very yummy  tmrc_emoticons.)
