- 2 green apples, cored and quartered
- 1 carrot, roughly chopped
- 2 eggs
- 100g olive oil
- 1 tsp vanilla extract
- 250g Wholemeal SR Flour
- 80g honey
- 1 tsp cinnamon

Preheat oven to 180˚C and line a 12 cup muffin tin with muffin cases, or grease with oil.
Add apples and carrot to TM bowl. Grate 3 seconds/speed 5. Scrape down bowl and repeat.
Add eggs, oil and vanilla. Mix 10 seconds/speed 4.
Add flour, honey and cinnamon. Mix on "Counter-clockwise operation" /speed 3 until just combined. Don’t over-mix or muffins will be tough.
Pour into muffin cases and bake for 20-25 minutes.

Delicious. Having read other comments I used butter, 2 carrots and 2.5 apples. Also reduced honey to 70g.
Good quick-mix recipe I used grape seed oil and popped a pecan on top of each muffin. We all love them, thanks.

I used butter instead of oil, three small apples, reduced the honey a little and added a handful of saltanas.
I love the fact these are a healthy version of a muffin but I think the recipe should state a light olive oil as the standard EVOO is too overpowering. I'll have to try them again with a different oil
Easy and tasty
Great recipe for kids lunchboxes. I make a similar recipe but use apple and pumpkin combination, I'm sure pumpkin would also work if substituted in this recipe.
I did that once when I used a robust strong flavoured olive oil. Try a light fruity olive oil... it is worth a retry. They are a great lunchbox snack.

A little dry but the kids loved them
These were nice and moist. I used half and half olive oil and coconut oil too and spelt flour. only used half the honey but I bet it's nicer with the whole lot. they are lovely thank you
