- 240 g raw pumpkin, cubed (2-3 cm)
- 30 g rolled oats
- 40 g walnuts
- 1 Small lemon, rind only
- 1 handful of basil leaves
- 400 g Tinned chickpeas, drained
- 1 egg

Place pumpkin in a Thermoserver, cover with boiling water and leave for 15 mins.
Place oats in bowl and mill 20 sec/speed 10. Set aside.
Place walnuts in bowl and chop 1 sec/Turbo. Add to oats.
Place lemon rind in bowl and mill 10 sec/speed 10. Scrape down bowl and mill further if you prefer smaller pieces.
Place basil in bowl and chop 3 sec/speed 8. Scrape down sides of bowl.
Add drained chickpeas and drained pumpkin and mix 5 sec/speed 5 (adjust the time depending on the texture you would like for your patties).
Add oats, walnuts and egg and mix 15 sec/"Counter-clockwise operation" /speed 3 or until combined. You may need to stir with your spatula and then mix again for a few more seconds.
Cook in a fry pan over medium heat until browned.
Tip
Great with sour cream and sweet chilli sauce, served as part of a salad or on a wrap/burger.
Follow the same method for TM31 and TM5.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

I cooked these in patty pans as they were for a party. Subbed breadcrumbs for oats, mixed herbs for basil and left out egg as I needed a vegan version, so I probably shouldn't leave a review rating but I would like to thank you for the base recipe. It's always good to find interesting flavour combos to go with cheap ingredients like pumpkin. Thanks again.

I didn’t have any lemon so used lime and I added a bit more oats after reading it was a wet mix.
i used egg rings to help them keep a round shape which worked perfectly!
The kids wolfed then down with salad between toast for some Sunday lunch burgers.

Very delicious, but don't expect to be able to shape these into patties. I added a whole heap of breadcrumbs to try, and still had to spoon sloppy mixture onto the bbq. Didn't matter, they stil worked (had to cook a long time before flipping) and were tasty. I'd make them again!
