Ingredients
Chelsea's Cookie Slice
- 225 g Butter, softened
- 200 g brown sugar
- 110 g white sugar
- 5 egg yolks
- 3/4 tsp baking powder
- 3/4 tsp bicarbonate of soda
- 1 tsp salt
- 325 g flour
- 200 g dark chocolate chips
- 2 teaspoons vanilla essence
- 50 g dark chocolate
- sea salt

- Pre heat oven to 180 degrees and line a slice tin with baking paper
- Weigh in butter (if it has been in the fridge and isn't soft, try 1 minute at 40 degrees speed 3 until soft), brown sugar and white sugar
20 seconds speed 4 - Scrape the sides and do 20 seconds speed 5 this time
- Scrape the sides and repeat - trust me!
- Scrape down the sides again and add egg yolks
10 seconds speed 4 - Scrape the sides and add baking powder, baking soda, salt, flour, chocolate chips and vanilla. While the spatula is inserted through the hole in the lid, 10 seconds speed 4 reverse blades. Use the spatula to combine as blades are running
- Transfer dough to lined tin, return bowl to Thermomix® and use Turbo mode for 1 second to get any reamining dough off the blades. Press out using wet fingers
- Prepare the bowl for pre clean. While the bowl and lid are sitting back in the Thermomix®, place slice tin ontop and weigh remaining chocolate. Spread out evenly and slightly press into dough. Use pre clean mode
- Bake for 20 - 25 minutes or until you like it. Sprinkle with sea salt flakes straight away once out of the oven. Dig in while hot and serve with french vanilla ice cream or allow to cool before slicing (use your pizza knife to cut if you have one)
