Ingredients
Chelsea's Egg Cups
- 300 g cheese, edam, tasty, cheddar etc
- 180 g brown onion, halved
- 100 g bacon
- 10 g olive oil
- 80 g frozen spinach leaves, or pak choi/bok choi
- 1 package seasoning mix for soup, ie maggi onion soup/chicken soup mix
- 4 eggs
- 20 g flour
- .5 tsp salt
- .5 tsp ground pepper
- 1 tsp mustard
- 100 g cream

- Pre heat oven to 200 degrees fan forced and line/spray a 12 hole silicon muffin pan
- Cut cheese into cubes and weigh into bowl. Chop 5 seconds speed 7. Transfer to a separate bowl
- Weigh in onion. Chop 4 seconds speed 5
- Scrape down sides. Slice bacon into chunky strips and weigh in bowl. Add olive oil and cook for 3 minutes at 100 degrees speed 2 reverse blades (remove measuring cup)
- Weigh in frozen spinach. Chop 8 seconds speed 6 if using fresh - skip the chop
- Add maggi soup mix, eggs, flour, salt, pepper, mustard, cream and 240g of the grated cheese. Mix 5 seconds speed 4
- Divide into lined/greased muffin tin and top each with the remaining grated cheese. Bake for about 20 minutes
Tip
So versatile. Try adding or subsituting mushrooms, sundried tomatoes, feta, olives, broccoli, peas etc.
Once cooled they can be frozen and re heated from frozen. Serve with a fruit chutney
