Ingredients
Muffins
- 300 g zucchini, chopped roughly
- 100 g Butter
- 150 g Rapadura Sugar, or raw sugar
- 3 eggs
- 250 g self-raising flour
- 20 g cocoa powder
- 1/2 tsp cinnamon
- 1/2 tsp Nutmeg
- pinch salt
- 100 g buttermilk, or plain milk

1. Preheat oven to 180deg
2. Add zucchini to TM and grate - 3 sec/speed 5. Scrape and repeat. Set aside, DON'T clean bowl
3. Add butter and sugar to bowl and cream - 20 sec/speed 4. Scrape and repeat
4. Add remaining ingredients (including reserved zucchini) and mix - 15 sec/speed 4. Hand stir any ingredients that may not have mixed in properly
5. Spoon into cupcake moulds and bake for 15 min or until firm to touch
Muffins
Tip
Deliciously moist on their own, but feel free to add a little icing and spinkles to 'party them up'!
Icing - 150g icing sugar, tiny splash of milk, few drops of food colouring and mix - 30 sec/speed 3-4. Repeat if needed.

Delish! I added vanilla instead of cinnamon and nutmeg.
Kids loved them and no idea they had zucchini in them!
As per others i reduced the sugar to 100g and was perfect.
My kids love these, they had no idea there was zucchini in them! I do the following modifications with success:
Half almond flour, half spelt flour
90g sugar
2 eggs 1 banana
We love these... i don't include the nutmeg and sometimes sprinkle icing sugar on top...
My little people can only taste the chocolate

Kids love these zucchini muffins. I used a purple carrot and a zucchini, and subbed buttermilk for kefir.
Very nice! Like the nutmeg in the flavour. Kids knew something was up immediately but gobbled them up anyway. Made as per recipe but with GF flour
These are great, haven't made them with buttermilk yet but I'm sure that it would make them even better. I keep a few in the freezer for when I need a sweet fix.
