Ingredients
Jam Crumble
- 385 grams plain flour
- 120 grams sugar
- 10 grams baking powder
- pinch salt
- 80 grams Butter, cold, cut into cubes
- 50 grams Butter, extra, cut into smaller cubes
- 1 egg
- 150 grams Jam, more or less to make thin/thick layer
- **My Top pick jam for this recipe is apricot, but any jam will work.

- Pre-heat oven at 180°, Line a 20cm spring form tin with baking paper side and base.
- add plain flour, sugar, baking powder and pinch salt.
- Mix with MC on, 20sec/speed4
- Add 80g of cold butter and turbo 2.0 x 2
- Add egg
turbo 2.0 x 2 - Scrape down side and repeat
turbo 2.0 x 2 - Add approx 2/3 of crumbly mixture into the cake tin and lightly press on the crumble to firm up slightly.
Spead the Jam evenly and on top sprinkle with remaining crumble mixture. - scatter on top the remaining 50g more cold butter. ( making sure your butter are smaller pieces and evenly scattered.
Bake 30-40 minutes. - Allow you jam crumble cake to cool and serve with vanilla ice cream.
Tip
This is a great recipe to use up any unwanted jam. My top pick is Apricot jam.

Perfect with a cup of coffee
Brilliant jam crumble! I used apricot jam as this recipe recommended. I look forward to trying a different jam to give it a different flavour. I thought this cake was even better the next day.
