Ingredients

Base

  • 125 grams Butter
  • 100 grams plain flour
  • 20 grams cocoa
  • 60 grams dessicated coconut
  • 90 grams brown sugar

Caramel

  • 400 grams sweetened condensed milk, (1 tin)
  • 2 tablespoon golden syrup
  • 60 grams Butter

Chocolate Top

  • 400 grams chocolate
  • 50 grams Copha

Recipe's preparation

    BASE
  1. Preheat Oven to 180 degrees Celcius

  2. Grease and Line a slice pan or square cake pan.

  3. Melt Butter, 2 minutes, 70 degrees, speed 2.

  4. Add remaining ingredients.

    Mix slowly up to speed 4 for 20-30 seconds.  Stop to scrape down the sides if required.

  5.  Using a small square of baking paper to cover the base; use the MC to press evenly into slice pan.

  6. Bake for 15 minutes; or until lightly golden.  Allow to cool slightly.

  7. CARAMEL
  8. Add Caramel ingredients to Thermomix.

  9. With MC in place, cook 5 minutes, 70 degrees, speed 3.

  10. Pour over base (use spatula to pour slowly).

  11. Return to oven for 12 minutes.

  12. Cool in tin, then refrigerate for 3-4 hours or overnight.

  13. CHOCOLATE TOPPING
  14. Combine chocolate and copha in Thermomix. Chop 5-10 seconds; speed 8.

  15. Melt 3 minutes, 50 degrees, speed 3.

  16. Pour evenly over chilled base and caramel, allow to set.

    Cut into small pieces, it's decadently rich!

    This is delicious! So easy - I changed the flour to a combo of gf flours as I am coeliac and it still worked out perfectly.. Definitely ate wayyyyy more of it than was shared (oops).

    I'm having problems with the caramel layer soaking into/through the base...any advice?

    It tastes like it's meant to but its VERY messy.

    Very nice. I replaced the chocolate topping with white chocolate and left out the copha. Awesome.  tmrc_emoticons.;)

    Is it me or is the chocolate just not thick enough?  I've updated the quantity from 200g to 400g for the topping tmrc_emoticons.;)
