Ingredients
Carrot Cake
- 250 grams carrot, chopped into 1 inch pieces, (no need to peel)
- 150 grams raw, unsalted almonds
- 2 eggs
- 2 level teaspoons baking powder
- 50 grams plain flour
- 100 grams honey, (I prefer raw)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon Cloves (ground)
Cream Cheese Frosting
- 250 grams cream cheese
- 30 grams Maple syrup, (I prefer Canadian 10% pure)
- 1 teaspoon Vanilla Bean Paste
- handful walnuts, for topping
- Desiccated Coconut, for topping

CAKE:
Pre-heat oven 180 deg & grease & line baking dish. I use a silicone loaf tray
Mill almonds 7 sec sp 10
Add carrots & chop 5 sec sp 7
Add all other ingredients & mix 20 sec sp 3. Scrape sides & repeat for 5 sec if necessary. Bake 35min then set aside to cool.
While the cake is cooking, you can prepare your frosting
FROSTING:
Roughly chop cream cheese with spatula & place into bowl
Add maple syrup & vanilla bean paste & mix 30 sec sp 5. You may need to stop & scrape the bowl during the mixing time.
Once the cake has cooled, spread the frosting over the top, sprinkle with coconut & walnuts & enjoy.
Tip
If you have leftover frosting, place it into a zip lock bag & freeze for next time.
This makes great cupcakes too - just watch them in the oven as you may need to adjust the baking time.
For extra goodness, sprinkle over some pepitas after you've spread the frosting onto the top of the cake. Sliced strawberries, blueberries, anything goes!

Highly recommend! Such a healthy cake alternative. I added sultanas at the end and reduced honey to 70g for personal taste.
