Ingredients

Bread

  • 2 eggs
  • 100 grams caster sugar, *
  • 55 grams brown sugar, *
  • 60 grams apple sauce, (3 Tbs)
  • 1/4 tablespoon bi-card soda
  • 2 Large Ripe Bananas
  • 80 grams skim milk
  • 10 grams olive oil
  • 3 teaspoons vanilla essence
  • 300 grams plain flour, **
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 100 grams walnuts, ***

Recipe's preparation

    Bread
  1. Preheat oven to 165 degrees.

     

  2. Line a loaf pan with baking paper.

     

  3. Add eggs and sugar to TM with butterfly added and beat on speed 4 until light and fluffy (about 2 minutes).

     

  4. In a small bowl add apple sauce and bi-carb soda, mixing until it reacts (this gives air to your mixture).

     

  5. Remove butterfly and add the apple bi-carb mix, halved bananas, milk, oil and vanilla essence to TM bowl.  Mix on speed 5 for 30 seconds - 1 minute until all ingrediants are mixed well.  If bananas were not ripe enough you may need to increase speed to 6-7 to blend properly.

     

  6. Sift Flour into TM, then add Salt and Baking Soda.  Blend speed 4 for 1 minute.

     

  7. Fold in walnuts (break into smaller pieces) leaving some to scatter on top.

     

  8. Pour into pre-lined baking tin, sprinkle with reserved Walnuts and bake in pre-heated oven for 45 minutes.  Check with skewer to see if further 5 minutes is needed.

     

  9. Carefully remove from loaf pan onto wire rack and serve hot or cold!  Enjoy

Tip

* Substitute sugar for Coconut sugar, Stevia or any sugar substitute.

** I use Khorisan flour which has a beautiful taste and texture and is far healthier.  Can sometimes be tolerated in Gluten intollerant people.   I cannot stress enough the beautiful flavour this flour gives to this recipe.

*** Increase walnuts to your own preference
