Bread
- 230 g Sour Cream Light
- 210 g brown sugar
- 2 eggs
- 2 tsp vanilla essence
- 260 grams plain flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground nutmeg
- 180 grams apples peeled and cored
- 120 grams chopped pecans
Praline Topping
- 100 grams brown sugar
- 115 grams Butter

Heat oven to 180 degrees cel. Grease and flour a 9 x 5 (22 x 12cm) inch loaf pan.
Add peeled, cored apples to TM and chop Speed 4, 5 seconds. Set aside.
Add butterfly attachment to TM and add the sour cream, brown sugar, eggs, and vanilla mixing speed 3, 2 minutes.
Add in flour, baking powder, baking soda, salt, cinnamon and nutmeg. Mix speed 3 for 20 seconds or until well combined.
Add the chopped apples and 1/2 cup of the chopped pecans and mix speed 1, 20 seconds.
Pour batter into the prepared loaf tin. Sprinkle with remaining pecans, pressing them lightly into the batter.
Bake for about 55 minutes or until a skewer comes out clean. If the bread is browning too fast, cover with foil loosely over the top of bread to prevent it from burning. Once cooked, cool in the pan for about 15 minutes then transfer to a wire rack to finish cooling. While the bread is cooling make the praline topping as below.
In a clean TM Bowl with butterfly attachment, add the brown sugar and butter. Cook speed 2, 5 minutes, 120 degrees. If not thick enough, add another 1 minute at a time. Drizzle over the bread whilst still hot. Cool and then slice and serve.
Tip
can swap Pecans for Walnuts or other favourite combination

This recipe is perfect. I made this recipe to use up some soggy apples that either needed to be chucked away or cooked up. So I made this recipe to use them up. I used normal sour cream and walnuts. The praline icing is beautiful drizzled on top, although very oily, it tasted amazing with the cake. Everyone who tasted it said it was the best cake they have tasted. Next time I will try this with light sour cream & pecans. Thanks for a great recipe.
