Ingredients

Patties

  • 1 Head of Cauliflower
  • 2 large eggs
  • 1 cup Mozzerella cheese, grated, add more if you want it extra cheesy
  • 80 grams Bread Crumbs or Panko, add more for extra crunch
  • 1/4 teaspoon cayene pepper, Optional - adjust to suit taste
  • 1/2 teaspoon sea salt, Adjust to suit taste
  • olive oil for cooking
  • 3 tablespoon plain flour
  • 1/2 Grated Onion

Recipe's preparation

  1. Break Cauliflower into florets and place into bowl along with half an onion.

  2. Chop speed 6 until fine scraping down sides of bowl and chopping for a few seconds more if required.

  3. Cook at 100 degrees, speed 3, 7 minutes.

  4. Add Butterfly and mix 10 seconds on speed 4 scraping down sides of bowl during mixing if required.

  5. Add Grated Cheese, Eggs, Breadcrumbs (or Panko) Flour, Cayene Pepper and Salt to taste.

  6. Mix 2 minutes speed 4 until well mixed (this step is important).

  7. Coat non stick pan or griddle with olive oil over medium high heat.

  8. Form the mixtures into patties on the pan about 6 cm wide (larger if you prefer) and cook until golden brown and set (about 3 minutes each side).

  9. Keep each batch warm in thermal servers (or oven) until ready to serve.

Tip

Panko is a Japanese-style breadcrumb traditionally used as a coating for deep-fried foods. The biggest difference between panko and standard breadcrumbs is that panko is made from bread without crusts.

Panko’s crustless bread is coarsely ground into airy, large flakes that give fried foods a light, crunchy coating. The flakes tend to stay crispier longer than standard breadcrumbs because they don’t absorb as much grease so healthier for you.  Can usually be found next to breadcrumbs in all major supermarkets.

    I made this and they turned out ok.

    I wanted to know if at step 6, the butterfly is kept in or do you take it out for this stage?

    These are delicious!!!! I will definitely be making them again. I only made a half batch and used mozzarella cheese. Did whip it for double the time and that really changed texture of mixture. Then purely by chance the mixture sat for about an hour before I made it into parties. (Might of helped Panko make mixture a good consistency). Toddler enjoyed and hubby loved them!

    I'm sorry but this didn't work well for me. I followed the recipe and the texture was good when I put in in the pan to cook. Initially I thought I had the temperture too high because I burnt the first lot of patties and they werent cooked on the inside. So I cooked the remainder on a very low heat and it looked nice with a golden crust, but when I cut into the patties I found again it was not cooked on the inside. This second batch of patties were on the stove for about 10 minutes. Not sure what went wrong.

    Made these last night - they are OK, but due to similar ingredients, I'll think I'll stick to cheesy cauliflower bake

    i have used a  recipe almost identical to this many times pre-Thermo days, the only difference being the quantity of panko....my recipe says 1/2 cup panko, this recipe is close to 2 cups....mine were usually quite wet and difficult to handle, so when i used the quantity mentioned in this recipe, i was delighted with the texture.....they turned out perfectly, except they just tasted like fried bread!!!!....I'm not going to give up though....maybe a little less panko next time......half the joy is the experimenting....

    To Kymkay - I think you got something wrong, because these have been made many times and worked out the same way each time.
