Ingredients

Pastry

  • 230 grams cream cheese, softened
  • 230 grams Unsalted butter, softened
  • 250 grams plain flour
  • 1/4 teaspoon salt

Filling

  • 50 grams sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground allspice
  • 235 grams peeled apples
  • 40 grams cold unsalted butter

Final

  • 1 large egg yolk
  • 40 grams water
  • 80 grams coarse sugar
  • 20 grams Cinnamon-sugar

Recipe's preparation

    Pastry
  1. In TM bowl with butterfly attachment, add cream cheese and butter and mix Speed 4 x 30 seconds or until smooth.

  2. Remove butterfly and add flour and salt to mixture.  Mix 5 seconds, speed 6.  Then knead Dough mode"Dough mode" 2 minutes. 

  3. Divide dough in half. Shape each into a ball, then flatten into a round disk. Wrap in plastic and refrigerate for 30 minutes.

  4. At this stage, preheat oven to 220c. (allow however much time your oven needs bearing in mind dough needs 1/2 hour in fridge.

  5. Apple Filling
  6. In a clean TM bowl, add the sugar, cinnamon and allspice.  Mix speed 4 x 5 seconds.   Set aside.

  7. Add appies to TM and chop speed 4, 5 seconds.

  8. Remove dough from fridge and divide each portion of dough into 12 balls (making 24 altogether). On a lightly floured surface or your TM matt, roll each ball into a 10cm circle.

  9. Place a tablespoonful of chopped apples on one side. Sprinkle with 1/2 teaspoon sugar mixture; then dob on 1/4 teaspoon butter.

  10. In a small bowl, whisk egg yolk and water. Brush edges of pastry with egg wash; fold pastry over filling and seal edges well with a fork. Place 5cm. apart on ungreased baking sheets. Brush remaining egg wash over tops. Cut slits in pastry. Sprinkle with coarse sugar and cinnamon-sugar.

  11. Bake at 220° for 11-14 minutes or until golden brown. Place on wire racks to cool. Makes 24.

    Yes I had some leftover apples so 10 is probably better I will change recipe to state 10 now tmrc_emoticons.)

    Just made these this arvo.  didnt do 12 balls for each portion did 10 otherwise they were splitting with the tablespoon of apple in them (too much filling).  But were very nice, the pastry is a new one for me, comes out a little like puff maybe with all the butter.  Certainly will make again.  Thank you for sharing.
