  • 50 g honey
  • 1 tsp vanilla extract
  • 300 g raw cashews

Recipe's preparation

    Method
  1. Preheat your oven to 170 degrees celcius.
  2. Line your oven tray with baking paper. Put tray aside.
  3. Place a bowl on your thermomix lid and measure 80 grams raw sugar. Put the bowl to one side.
  4. Add the butter, honey and vanilla to the thermomix bowl with MC on and melt for 2 minutes, Varoma, speed 1.
  5. Add the cashews to the thermomix bowl with MC on and coat them in the honey mixture for 30 seconds, speed 1.
  6. Spread the honey cashew nut mixture out on to the baking paper lined tray. Place the tray into the preheated oven. Roast in the oven for 15 minutes. At each 5 minute interval, mix the nuts to ensure the nuts are evenly coasted with the honey mixture and are evenly roasted.
  7. After 15 minutes check the oven to see if the nuts are ready. You will know that they are ready when the honey has bubbled, becoming sticky and a caramelised consistency.
  8. Remove the tray from the oven. Add the raw sugar into the tray with the roasted caramelised cashews and shake the tray to ensure the raw sugar evenly coast the caramelised nut mixture.
  9. Allow the sugar coated cashews to cool completely on the tray. Separate the nut mixture into bite size pieces. Once completely cooled place in an airtight container or into individual jars for gifting.
