- 250 g butter at room temperature
- 200 g raw sugar
- 2 lemons - just the rind
- 200g plain flour
Icing
- 200 g icing sugar
- 1 tablespoon lemon juice, from the lemons !
- food colouring if needed

Turn the oven onto 200 degrees to warm up.
Mill the raw sugar and the lemon rind until it resembles icing sugar.
Add the softened butter and mix on speed 3 for 5 secs. Add the butterfly whisk and whisk until pale.
Add the flour to the TM and mix on speed 3 to combine (add 1 tbsp cold water if needed).
Make into a dough and roll out about 0.5 cm thick. Use a cookie cutter to cut out shapes. Lay on the baking trays and cook for about 12 mins until golden. Leave to cool on cooling trays.
Add the icing sugar to the TM - add the lemon juice and mix on speed to combine.
Either spread on the biscutis or pipe on a message.

Good flavour, but...
I added an addtional 150g flour as it was too wet to work with.
This recipe, the dough, did not work for me at all.
Made $20 for the school donating these to the Mother's Day stall ...
