Had no apricots, used dried mango. Had no plain yoghurt - used mango yoghurt. Everyone thoroughly enjoyed it.
If you add damp baking paper in bottom of varoma make sure you poke holes in the paper to let steam in or else it won't cook. I found the quinoa went mushy and fairly flavourless. It wasn't a favourite in our house. Sorry.
If i wanted to halve this recipe, do i need to change any of the cooking times?
This is soooooo yummy, many family and friends have asked for the receipe but i tell them its a secret!!! I didnt have any mint and i used store brought yoghurt and it was delicious!!
Very nice
Soooo yummy! I added the chicken in the Verona when I added the pumpkin. Was a nice addition to the salad.
I'm sorry if this is a really silly question, but how do you steam the quinoa/pumkin? Pressumably you need liquid in the bowl? Water? How much?
now i made this recipe the second time, delicious like the first time, but it was now very dry and clumpy, is it possible that the quinoa absorbed the fluid of the dressing because i made it in the morning and we had the salad in the evening.
Thanks for respond
Tom

I love this recipe, such fresh flavours, a great meal, thanks!
This is our all-time favourite. The flavours are exquisite together. If we have people coming over for a BBQ, this will always be on the table. It's inexpensive to make when you have those ingredients in the pantry, and comes together very quickly.
