Ingredients

Biscuit Base

  • 60g raw sugar
  • 150g TM butter
  • 1 tablespoon cornflour
  • 180g plain flour
  • 1 teaspoon vanilla extract

Lemon Topping

  • 180g raw sugar
  • Rind from 1 lemon
  • 4 eggs
  • 40g plain flour
  • 160g Lemon Juice - freshly squeezed
  • TM icing sugar

Recipe's preparation

    Biscuit Base
  1. Preheat oven to 160 degrees fan forced.

    Put the sugar into the TM and mill for 3 secs to make caster sugar - set aside.

    Weigh in the butter into the TM bowl and melt for 1 min at 60 degrees and the sugar, cornflour and plain flour.

    Mix for 10 secs at speed 3 to make a soft dough.

  2. Spread into the tin and cook for 15 mins until golden brown.

  3. Lemon Topping
  4. Add the sugar and lemon rind to the TM bowl and mill for 20 secs on speed 9.

    Add the eggs, flour, lemon juice to the bowl.

    Cook for 9 mins at 90 degrees on speed 3.

    Spread over the biscuit base and leave to cool.

    Sieve icing sugar over to serve.
