Ingredients
cake
- 75g rice, brown or white
- 75g polenta
- 150g dried apricots
- 100g pitted prunes
- 100g Butter, or soya marg for dairy free
- 1 banana, ripe
- 2 lemons, juice and rind
- 75g raw sugar
- 220g dried fruit (sultanas, raisins etc)
- 1 tsp xanthan gum
- 150g nuts (walnuts, macadamias etc), or use seeds for nut free
- 2 eggs, or 2tsp gf baking powder for egg free
- 2 teaspoons Nutmeg
- 1 teaspoon cinnamon
- teaspoon ginger
- 1/2 teaspoon cloves
- 30g brandy (optional)

Line a 20cm cake tin with baking paper. Preheat oven to 160 degrees
Put the polenta and rice into the TM bowl and mill for 1min on speed 10. Add the lemon rind and mill for an extra 6 secs on speed 10. Set aside
Add the apricots and prunes to the TM bowl and chop on spped 7 for 6 secs. Set aside
Add the sugar, butter, banana and lemon juice to the TM bowl. Mix for 20 secs on speed 5
Add all the other ingredients (fruits, nuts, eggs, spices, flours, xanthan gum, brandy) and mix for 30 secs"Counter-clockwise operation" speed 4 to combine
Pour into prepared tin and bake in the oven for 1-1.5 hours or until a skewer comes out clean
Decorate either with apricot jam and nuts or marzipan and icing
