Poolish

  • 30g bakers flour
  • 100g TM buttermilk
  • 20g raw sugar

Baps

  • 350g bakers flour
  • 20g TM butter
  • 220g TM buttermilk
  • 1 sachet dried yeast
  • 1 teaspoon salt

Recipe's preparation

    Poolish - the bread starter
  1. Put flour, buttermilk and sugar into the TM bowl.  

    Cook for 3 mins at 80 degrees, speed 3.

    Leave in TM bowl.

  2. Baps
  3. Add flour, butter, buttermilk, yeast and salt to the TM bowl, mix on speed 6 to combine into a dough.

    Knead for 3 mins - Dough mode"Dough mode"

  4. Wrap dough in Thermomat and leave rise - until it has doubled in size.

  5. Once risen, knock back into shape and shape into baps - the dough is very wet, using oil on your hands helps.

    Put baps onto a lined baking tray and leave to rise again until double in size.

  6. Once risen, put into a cold oven.  Turn the oven up to 200 degrees and cook for 15 mins.

Tip

Keep your buttermilk from making your TM butter to make these gorgeous soft baps - better than anything you can buy in the shops !!!

    I've never made butter before. Do I need to make the butter and buttermilk to make these, or can I just use store-bought butter milk and butter?

    I have an evil oven that takes ages to heat up. I'm concerned that putting these into a cold oven, for 15 minutes, won't work for me, as by that time the oven might only have gotten to 100 degrees. I will be trying it, but I'm not certain of success with that info - I might need to adjust it for my oven.

    Wonderfully soft bread rolls! Made for dinner last night & everyone thought I'd been to a bakery, they were impressed when I said I made them. Five stars!!! Crunchy on outside, soft on inside = perfect rolls. I turned some of mine into garlic bread rolls. So easy & fast. This will be my go to recipe for rolls from now on.  Thank you for posting.  tmrc_emoticons.)

    No one would believe me that I made these and that I hadn't ducked down to the local bakery!  Absolutely beautiful and so soft and light.  Found my new go to recipe for kids lunches! Mine did take a bit longer than 15 mins even though I got 15 out of my batch. Winner!

    I've made these so many times now but made 1 1/2 times the recipe, substituted sugar for coconut sugar and I didn't have any buttermilk so added a splash to the milk for the polish and a tsp to the main part to make cheats buttermilk. Most wonderful baps ever. Thank you so much for the recipe.  Love

    These are amazing. The whole family loved them and they are great buns for school lunches. I didn't have buttermilk so added a tsp of apple cider vinegar to the milk to make cheats buttermilk. Going to make some today.  Big Smile
