Ingredients

Biscuits

  • 125 g Butter
  • 1/2 tsp Vanilla Bean Paste
  • 30 g icing sugar, - premilled in TMX
  • 125 g plain flour
  • 40 g cornflour

Icing

  • 100 g Butter
  • 150 g icing sugar, - premilled in TMX
  • 1/2 tsp Vanilla Bean Paste

Recipe's preparation

    Biscuits
  1. Soften butter for 2 minutes, at 50°on speed 2.

  2. Add sugar & vanilla and cream for 10 seconds on speed 3. Scrape down and repeat.

  3. Add flours. Mix for 10 seconds on speed 3. Scrape down and repeat.

  4. Roll mixture into balls and flatten lightly with a fork,

     Bake at 160°(Fan Forced) for 10-15 minutes (until golden)
  5. Icing & Assembly
  6. Add all ingredients to TM bowl. Mix for 10-20 seconds on speed 4.

  7. When biscuits are cool, organise into pairs. Pipe icing onto bottom biscuit and sandwich together.

    These are perfect. So easy and so yummy!

    A Double Batch made 20 (22 but I ate them🤫) but instead of using 80g cornflour, I used 40g and 40g of custard powder as thats what my gran use to do. I also added passion fruit to the icing.

    These were just what I was looking for. Was a bit nervous about the runnyish butter in the batter, but worked fine. I doubled the batter and Thermie coped fine. So easy.

    I made these today, the first batch I didn't double and copied exactly and everything looked great until I put them into the oven- they collapsed within 5 mins.

    Determined I tried again and the mixture was mousse like this time ? So I added more flour and did another 10 secs on speed 3 and then all cooked fine bar one which collapsed. Rather odd. They're yummy though and I added passionfruit to my icing mixture. I will try again one day though 😌😌😌

    Should have made a double batch of the biscuits cause I only ended up with 12 small melting moments.

    Beautiful! They certainly melt in your mouth! I doubled the recipe for the biscuits, but kept the icing the same and there was plenty of it. Make sure to make the double batch, as they go fast!

    Easy and delicious! I added a passion fruit to the icing as I had some from our vine that I needed to use.
