Ingredients

Palm Sugar Butter

  • 35 g palm sugar
  • 100 g Butter, - room temp

Pancake Batter

  • 1 egg
  • 600 g buttermilk
  • 1 tbsp coconut oil
  • 200 g bananas (sliced) and/or blueberries
  • 450 g bakers flour
  • 1.5 tbsp rapadura or brown sugar
  • 1.5 tsp bi-carb soda

Recipe's preparation

    Palm Sugar Butter
  1. Place palm sugar in the TM bowl and grate on speed 8 for 5 seconds.

  2. Add butter and mix on speed 6 for 4 seconds.  Set aside.

  3. Pancake Batter
  4. Add flour, bi-carb and sugar to bowl.  Mix on speed 5 for 3 seconds.

  5. Add egg, buttermilk and coconut oil.  Mix on speed 5 for 5 seconds.  Scrape the sides down and repeat.

  6. Add banana and blueberries.  Mix on reverse on speed 3 for 10 seconds.

  7. Lightly fry 1/3rd - 1/2 cup of batter in a non-stick pan (or slightly coat pan with coconut oil) and fry for 2-3 minutes on each side.

    Serve with extra fruit, palm sugar butter and maple syrup.

    Delicious! I just went with the bananas and they were great. Just short of buttermilk so topped up with full cream milk. Happy to make these on a regular basis!

    Delicious. Didn't have buttermilk so just used lactose free skim milk and they were great tmrc_emoticons.-) thanks!

    Big Smile These were lovely, i added some chocolate chips to half of the batter and it was absolutely devine. Would make these again in a heartbeat

    I tried this reciple tonight and it was delicious! Cooking 10

    I didn't have enough buttermilk, so I used half buttermilk and half full cream but turned out nice still.  I didn't make the palm sugar butter either, just used plain butter.  Thanks for the yummy recipe though!  Oh and we added some bacon on the side!  Maple syrup and bacon on pancakes is my favourite!
