Ingredients
Sticky orange cake
- 75 grams Butter
- 1 egg
- 175 grams Plain or vanilla yogurt
- 1 orange, Juice and zest (finely grated)
- 1/2 lemon, Juice only
- 200 grams flour
- 2 teaspoons baking powder
- 150 grams raw sugar
- 2 teaspoons orange marmalade
Sticky orange glaze
- 1 orange, Juice and zest ( finely grated)
- 100 grams raw sugar
- 2 teaspoons orange marmalade

Heat oven to 180c ( 160c fan ).
Prepare cake tin or muffin tray.
Place cool cubed butter in the TM bowl and melt. 3 minutes, 60c, speed 2
Zest the orange and juice both the orange and the lemon.
Add: butter,juice ,zest,egg and yogurt. Combine on speed 4 for 7-10 sec.
Add : flour,sugar and baking powder. Combine on speed 4 for 7-10 sec
Scrape down the sides and add the marmalade. Combine on speed 3 for 7 sec
Pour mixture into prepared cake tin or spoon into muffin cases,
almost to the top.
Bake for 20-25 minutes until golden and risen. ( try not to open the oven while baking, this will affect the rise of the cake/ muffins.)
Leave stand for 5 minutes then place on a wire cooling rack to cool.
Sticky orange glaze: Clean, dry bowl. Add the sugar and blitz on speed 10 for 10-15 seconds = icing sugar
Add all other ingrediance and combine - speed 4 for 5 sec. ( the glaze should coat the back of a spoon,but still fluid.)
spoon glaze over the cake/ muffins.

Tip
For a gluten free option use: gluten free flour and gluten free baking powder
Dairy free option use: dairy free yogurt.
