Belgium Slice
- 150 g Butter, cubed
- 120 g brown sugar
- 250 g flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons mixed spice
- 1 1/2 teaspoons cinnamon
- 1 egg
- Jam
Raspberry icing
- 250 g icing sugar
- 1-2 tablespoons Boiling water
- 1/4 teaspoons raspberry essence
- Raspberry Jelly Crystals
- pink food colouring

- Preheat oven to 180°C
Line a 20cm x 20cm baking tin with baking paper
Add butter - 3 min / 75°C / spd 1.5 - Weigh butter, brown sugar and add egg
Beat 10 sec / spd 3.5
Scrape down sides of bowl - Weigh flour, baking powder, cinnamon & mixed spice - 4 sec / spd 4
- Press 2/3 of the mixture into the tray
Spread jam over the top
Drop small pieces of remaining dough to cover the jam
Bake for 25-30min or until firm and cooked
Cool in the tin - "Kettle" Clean and thoroughly dry mixing bowl to make Raspberry icing
- Icing sugar, hot water, raspberry essence & pink food colouring
5 sec / spd 4 - scrape down sides, mix again if needed
Spread over cooled cake - optional sprinkle with raspberry jelly crystals
