I'm cooking this todayRecipe's preparation
- Preheat the oven to 175c Bake for 50mins & 160c last 10 minutes. Grease/Spray a 200mm x 200mm x 57mm square pan.
1.5 cups plain flour (IMPORTANT Omit 3 tablespoons)
3 tablespoons of cornflour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup Greek yogurt
1 cup sugar
3 extra-large eggs
1 lemons rind
1/2 teaspoon pure vanilla extract
1/2 cup vegetable oil
1.5 cups mixed berries & 1 tablespoon plain flour (In a small bowl mix together. This will prevent the berries from sinking to the bottom of the loaf)
LEMON SUGAR SAUCE
1/3 cup lemon juice
1 tablespoon sugar
Add ONLY the FIRST 4 INGREDIENTS in "Closed lid" TURBO 1sec repeat 3 times.
Add the rest of the ingredients MINUSMIXED BERRIES & MINUSLEMON-SAUCE Speed 7, 20secs. Scrape down the sides & mix again on Speed 4, 10secs.
Add 1.5 cups of Mixed Berries in "Closed lid" on "Counter-clockwise operation" "Gentle stir setting" check regularly until berries fold into the batter, then stop.
Once the cake is baked, allow it to cool in the pan for 10 minutes before flipping out onto a cooling rack.
Whilst cake is still warm, pour the lemon-sugar sauce over the cake and allow it to soak in
Lemon-Sugar Sauce (commence making the sauce after you take the cake out of the oven)
Add 1/3 cup lemon juice and remaining 1 tablespoon sugar HEAT 80C SPEED until the sugar dissolves and the mixture is clear.
Pour over baked cake.

The flavour of the cake was really nice. However, the cake didn't rise at all so it turned out quite dense and the texture was very thick and doughy. Maybe it needs two tablespoons instead of two teaspoons of baking powder? Thanks for the recipe. Will probably give it another go some time with more baking powder as it was really tasty.
