Ingredients

  • 1 clove garlic
  • 1 Onion, small cut in 1/4
  • 10g EVOO (extra virgin olive oil)
  • 500g diced frozen vegetables, I use the 1kg woolworths brand (under $2)
  • 1 can Diced Tomatoes (400g)
  • 2 tablespoons TM vegie stock paste
  • water to fill TM Bowl under the maximum level

Recipe's preparation

  1. Add Garlic Clove & Onion to TM Bowl, 5 secs, speed 7

    Scrape down sides, add oil

    Sauté on Reverse, Speed 1 on 80c for 5 minutes

    Add 500g diced frozen vegetables on Reverse, Speed 1 on 80c for 5 minutes

    Add Can of Diced Tomatoes on Reverse, Speed 1 on Varoma for 5 minutes

    Add TM Vegie Stock and enough water to fill TM Bowl under the maximum level on Reverse, Varoma, Speed 1 on for 15 minutes
  2. IF OVER BOILING OCCURS PLEASE READ
  3. Turn OFF Thermomix & wait 5 minutes and then Repeat ABOVE COOKING INSTRUCTIONS UNTIL COOKING TIMES ACHIEVED tmrc_emoticons.)

Tip

ADD COOKED TUBE PASTA (cook separately & add some olive oil after the pasta is drained to keep it from drying out)

    I love this for a quick healthy lunch. I also added celery with onion and garlic, a can of kidney beans in the last 2 minutes of cooking time and sometimes some cooked chicken stired through at the end as well. It's a great basic starting recepie to jaz up however you want. A little cooked pasta and some chili is also nice.

    Thankyou for this recipe.

    I modified it by adding cubed chicken thighs and some basil with the tin of tomatoes, threw the frozen veg in after 5 mins cookig at 100 degrees.

    It all cooked in 15mins;  so easy and great for a hearty winter lunch.
