- 200 g sweet potato, diced
- 125 g coconut oil
- 170 g Rice malt syrup
- 15 g vanilla extract
- 2 eggs
- 155 g Self Raising Flour
- 45 g Cacao
- .5 teaspoon baking powder
- choc chips

- Preheat oven to 180 degrees
Grate sweet potato for 10sec sp 5 (it needs to be quite fine)
Add all ingredients except choc chips, blend 20sec speed 5
Put in a prepared slice tin and sprinkle with choc chips
Bake for approx 20-25min
Tip
The brownies are not overly sweet so if you remove the choc chips you may need to swap the rice malt syrup for something a bit sweeter such as honey.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Delish! I purée the sweet potato first and it gave the brownie a beautiful gooey texture. I also stirred my chic chips through the mix just before cooking. Both white and milk choc chips.
These were so light and moist. Absolutely delicious. I only put 70g of rice malt syrup and was plenty sweet enough for me. Family loved it. Big ✅of approval
Nice healthier alternative to a brownie. If wanted sweeter I'd use agave syrup and use half the amount instead of rice syrup. I added lots more choc chips for sweetness.
