Ingredients

Buttermilk dough

  • 250 g buttermilk
  • 1 sachet instant yeast (or 2 teaspoons)
  • 50 g Coconut sugar
  • 70 g coconut oil
  • 350 g bakers flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 scoop chocolate chips or chunks

Glaze

  • 1 tablespoon Coconut sugar
  • 3 tablespoons hot water

Cross

  • 100 g white chocolate
  • 250 g milk (optional), For cleaning the bowl at the end

Recipe's preparation

    Buttermilk dough
  1. Place buttermilk in TM bowl

  2. Add yeast and activate for 2 min/37°/Sp 1

  3. Place all other ingredients for buttermilk dough (excpet for the chocolate) and mix 5 sec/Sp 6

  4. Knead on dough function for 2 min

  5. Place dough in thermoserver/wrap in thermomat/leave in TM bowl with lid on

  6. Leave for at least an hour until dough doubles in size

  7. Place onto thermomat or floured surface and sprinkle the chocolate chips

  8. Roll up and divide into 12 balls

  9. Place onto oven tray and allow to rise further for about 20 minutes or until your oven has preheated to 200°C.  Pop them in a bake for around 20 minutes until golden. 

  10. Glaze
  11. Prepare your glaze by dissolving the sugar in the hot water. When the buns are golden, remove from oven and quickly use a pastry brush to paint them with the sugar glaze

  12. White choc crosses
  13. Place white choc in TM bowl and grate 5 sec/Sp 9

  14. Melt 4 mins / 50°C / Sp 2

  15. Place white choc into a piping bag or snaplock bag and snip the corner to pipe crosses across the choc chip buns

  16. White hot choc milk
  17. To clean the bowl and avoid wasting any good chocolate, add a cup of milk to the bowl and blitz on turbo for 1 sec

  18. Heat milk for 5 min / 80°C / Sp 4

  19. Enjoy!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
