Ingredients

DOUGH

  • water, ½ cup
  • ½ tablespoon sugar
  • 1 teaspoon olive oil
  • ½ tablespoon dried instant yeast
  • ½ tablespoon bread improver
  • Baker's Flour, 1¼ cup
  • ½ teaspoon salt

FILLING

  • 40 grams Butter
  • 2 cloves garlic
  • to taste pepper, ground
  • to taste dried mixed herbs

Recipe's preparation

    DOUGH
  1. Place water, sugar and olive oil in mixing bowl. Add yeast and bread improver to bowl, avoiding blades. Heat 37°c/4 min/speed 1.

  2. Add bakers flour and salt to mixing bowl. Combine for 45 seconds, gradually increasing to speed 6.

  3. Dough mode"Dough mode" Knead for 3 minutes. Place dough in a bowl, cover and allow to rest in a warm place for 10 minutes.

  4. FILLING
  5. In a small bowl, melt butter for 30 seconds, covered, in the microwave. Mince or finely chop garlic. Combine butter,garlic, pepper and mixed herbs.

  6. COOKING
  7. On a lightly floured surface, knock down dough. Roll in to a thick, rectangular log.

  8. Place dough on a lightly greased tray in cool oven. Turn on to 190°c and cook for 10 minutes

  9. Remove dough from oven. With a sharp knife, cut 4-6 evenly-spaced slits most of the way through the roll. Spoon in garlic butter mixture.

  10. Place dough back in oven for a further 10 minutes (or until cooked).

Tip

At Step 3, I place my dough in the oven on the keep warm setting to prove. You could also wrap the dough in a thermomat or place in a thermoserver to prove.

At Step 4, you could also clean and dry your mixing bowl while the dough proves, and use it to mince garlic, chop fresh herbs and melt butter if you prefer.
