Gerd's Heaven & Earth Beetroot Ice cream
- 250g Beetroot, peeled & roughly chopped
- 250g banana
- 250g fresh coconut flesh
- 300g pure cream
- 50g non bitter stevia

Gerd's method - Place the beetroot & coconut into the TM bowl & chop on speed 10 for about 20 secs till smooth. (scraping down the bowl & then repeating.) Then add the banana & stevia & chop on speed 10 for 20 secs or until smooth. Then add cream & mix for another 10 - 20 secs on speed 5 or until combined. Place mixture into ice cube trays or icey pole maker.
Arwen's version - I found it difficult to source a good coconut so I made coconut milk using sulphate free shredded coconut & water (quirky cooking recipe). Then I used 250g of the coconut pulp t6o this I added the fresh beetroot & chopped for 10 secs on speed 10 scraped down the bowl & repeated. My bananas were frozen & I added 1 exta frozen banana instead of using the stevia. I chopped this for another 20 secs on speed 10 then inserted the butterfly whisk & added the cream, whipping for 20 secs on speed 4. You can eat this straight away for a runny pudding style dessert or freeze into ice cube trays.
