Ingredients

  • 600 g Mixed seedless grapes
  • 60 g Butter Cubed, at room temperature
  • 1/2 cup caster sugar
  • 4 eggs, room temperature, lightly beaten
  • 300 g cream, extra to serve
  • 1/2 hazelnut meal, cup
  • 1 tablespoon dark rum

Recipe's preparation

  1. Preheat oven to 180C/160C fan forced.  Grease a shallow 1.5 litre (6-cup) ovenproof dish.  Place grapes in prepared dish.

  2. Beat butter and sugar together in TM bowl for 1 minutes on speed 4 until pale and creamy.

  3. Add eggs, cream, almond meal and rum and beat for 40 seconds

    on speed 4 until combined and smooth.  

    Pour over grapes and bake for 35 minutes or until

    golden and a skewer inserted at centre comes out clean.  

    Serve warm with extra cream.

The original recipe states almond meal. I used hazelnut meal as I had it in the pantry.

    So the first time I tried this was a disaster.  Way too runny and took ages to cook, then had to be disguised with ice cream and more fruit.

    Not to be beaten, I consulted a range of French cook books to compare ingredients, etc and tried again.

    Wooo hoo, nailed it.  A huge hit with dinner guests, and easy.

    Heres how, for future ref, for me;

    i found 1 min mixing time for butter and sugar not long enough to turn it creamy and pale, more like 5 mins, but, that could be because I did not get butter out of fridge earlier?

    i used 4 x 70g eggs, next time I will use 3.  I also used 200 mil of cream instead of 300 and 1 cup of almond meal instead of a half.  Swapped cognac for rum and added a dash of vanilla extract.

    French recipes seem to use cherries, but, as they were out of season (October) I used cut strawberries and blueberries.  Placed them on the bottom of dish, as per recipe, then poured batter, then spread more fruit, then another layer of batter, then more fruit.  Looked fantastic, especially dusted with icing sugar.

    Baked for prescribed time and it looked, and, more importantly tasted amazing.  Enough for 8 with whipped and pouring cream.  Probably more dense than the real deal, but, it was a delicious desert, a huge and easy hit.

    I made this but did to like it with the grapes (neither did my family). It would be lovely with cherries which is what I will try next time.

    Hi Jaqui,

    The original recipe called for almond meal. I was cleaning out my pantry and had hazelnut meal on hand. You can use either.

    Hi Jacqui, yes you can use either! Almond is more traditional. And yes you can either create your own Almond meal in the Thermomix or by it pre-ground.

    Hi in the recipe you say half cup hazelnut  meal and in preparation you say almond meal ??? Can you use either ??? And is this just  milled nuts ? A bit new to all this so follow each step exactly  thanks .
