Ingredients
- 1 teaspoon bicarb of soda
- 500 grams Milk
- 1 teaspoon bicarb of soda
- 100 grams fresh breadcrumbs
- 70 grams plain flour
- 70 grams Self Raising Flour
- 1 pinch salt
- 100 grams sugar
- 2 --- eggs
- 100 grams Butter
- 150 grams dates, chopped
- 150 grams raisins
- 150 grams currants
- 150 grams sultanas
- 50 grams mixed peel
- 90 grams brandy
- 100 grams almonds
- 100 grams walnuts
- 2 teaspoons cinnamon
- 2 teaspoons mixed spice
- 1/2 teaspoon Nutmeg
- 1/2 teaspoon ground cloves
- 1000 grams Boiling water
- 1 apple, quartered
- 20 grams Sago

Prepare at least one – 2 days prior to making
Soak sago in the milk overnight
Soak fruit overnight (or for a few days) in brandy before making
Day of making
Place 100gm bread into TM Bowl and blitz 2 sec / speed 8
Place fruit, nuts, sugar and breadcrumbs into a large mixing bowl then add flour, spices and salt and mix with a wooden spoon
Cut apple into quarters and blitz for 1 sec / speed 8 then add to dry ingredients
Place butter into TM Bowl and melt 50 sec / 50C / speed 3
Add eggs and mix 10 sec / speed 4
Mix carb of soda into milk and sago mixture and pour into TM Bowl mix 10 sec / speed 3, add mixture to remaining ingredients and stir
Spoon into dariole or silicone cupcake moulds and place into Varoma dish and onto Varoma tray (depending on the size of your moulds). Place water into TM bowl, place Varoma into position and steam for 45 minutes at Varoma temperature on speed 3
Remove puddings from moulds and allow to cool if planning on freezing.
If freezing allow to thaw then reheat in Varoma for around 15 minutes at Varoma Temperature on speed 2.
This will make around 21 individual puddings so several steaming sessions may be necessary.
Serve with Brandy Cream Sauce and Icecream.

I have just made these puddings now and they are perfect. I have never cooked a pudding before and love that I am doing so in the thermomix. I made 14 muffin size ones and a large one. It is beautiful and moist and with the brandy sauce it is divine.
A new friend dropped in and was so impressed. She now thinks I am some super chef and was oohing and ahhing right to the last mouthful!
Problem I have is stopping at one!

I made these today, halving the volume as I didn't need 21 puddings. My molds are 240ml and I got 6 puddings from the mixture, which was perfect. I decided to try one so I could be confident on Christmas day. It was a bit too moist but tasted great so I'll make more soon so make my numbers up..is the sago measure correct?
My comments keep getting cut short. Very frustrating. just wanted to mention the Apple is missing off the ingredients list
