Ingredients
Muesli Bar
- 150 g Any combination of dried fruit such as berries, dates, raisins, candied citurs peal, etc, sunflower seeds, sesame seeds, desiccated coconut, Use any combination or 1 type only
- 140 g Butter
- 80 g Dark Brown Sugar
- 1 tablespoon unsweetened cacoa powder
- 100 g rolled oats
- 30 g wheat germ
- 50 g puffed rice or rice bubbles

Place dried fruit /seeds / coconut in Mixing bowl and mix on speed 8 for 5 seconds. Set aside. (no need to clean bowl)
Place butter, sugar and cocoa powder in TM bowl and heat on 100 speed 1 for 10 min. (Thats right, 10 mins!)
Add reserved fruit mix, oats, wheat and puffed rice. Mix on "Counter-clockwise operation" , speed 2 for 30 - 40 seconds or until well combined. Use spatula to help mix if needed. Add more oats or wheat germ if mixture is too moist.
Place tightly in baking tray (use baking paper to press firmly down into the tray) and refrigerate until set. Cut in squares and serve. Store in refriderator until needed.
Tip
Any dried fruit can be used. If nuts are allowed include a few nuts in the 150 g mixed fruit batch
Use 30g dark or white choc chips in place of cocao powder to have a wonderful chocolate taste. Thus, put choc chips in stead of Cocao in recipe and leave to melt/cook with the butter and sugar.

Fantastic receipe. I read the comments and reduced the butter and sugar. I didnt have wheatgerm/puffed rice/rice bubbles so I used extra oats and Special K. To make it seem more like an Uncle Toby's I used chocoloate for the 6.5 year old. Will definately make this again.
Subbed cornflakes in as we had no rice puffs, reduced the butter to 100g and the sugar to 50g and they taste fantastic! Thanks for sharing.
Just made these and that are delicious! My mix was dried dates, dried apple and dedicated coconut. Hubby and the toddler have scoffed a few already, waiting for mr4 to get home and see what he thinks. Will defintely make again.
5 Stars for sure! I make a batch of these every week for my family & they are gone in the first few days! I do substitute the Dark Brown Sugar with Rapadura Sugar and decrease the amount to 50g and the Butter to 100g and it still works perfectly every time! I also have to sprinkle a few choc chips over the top to make them like the other kids Uncle Tobys bars for my little 5yr old *LOL*
Delicious!!! Didn't have wheatgerm or rice puffs but added some end of the packet muesli amd some corn flakes and the kids gave it the thumbs up! Great recipe thanks
