Ingredients

Base

  • 60 grams raw almonds
  • 100 grams Medjool Dates Pitted (See Tips)

Nice Cream Filling

  • 50 grams Peanut Butter
  • 2 Bananas (Med-Lge)
  • 120 grams coconut cream

Chocolate Topping

  • 60 grams Arnott's Granita Biscuits
  • 120 grams 70% Dark Chocolate Broken Into Pieces
  • 20 grams coconut oil

Recipe's preparation

  1. Grease silicone mini muffin tray/s

     

    Base:

     

    Place almonds into bowl & mill 10sec sp10

    Add dates and chop/mix 30sec sp6. Roll into small ball & press firmly into base of each muffin hole. Refrigerate while you complete the filling. Don't worry about washing the bowl.

     

    Nice Cream filling

     

    Add all filling ingredients 30sec sp6. Pour into muffin holes approx 3/4 of the way. Place the tray in the freezer while you complete the topping. You may need to give the Nice Cream 30min to firm up in the freezer before pouring on the chocolate.

     

    Choc topping:

     

    Place biscuits into bowl 4sec Counter-clockwise operation"Counter-clockwise operation" sp5 - set aside

    Without washing the bowl, add the chocolate into the bowl & grate 10sec sp10

    Add the coconut oil & melt 3min 50deg sp3. Pour over the Nice Cream, sprinkle with the biscuit crumbs & return to the freezer for min 1-2 hours before eating.

Tip

To make this dairy free, omit the choc topping or use a dairy free chocolate, which you can find at most health food stores.

 

You can substitute the Medjool dates with regular Iranian dates, just soak for a few minutes to soften. Dry/strain thoroughly before mixing with almonds.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
