Ingredients
Base
- 150 grams activated dehydrated buckwheat
- 150 grams soaked drained almonds
- 30 grams coconut oil
- 60 grams pitted dates soaked and drained
Choc layer
- 1 ripe avocado
- 1 tbsp Coffee, freezedried or very stong espresso
- 1 tbsp raw cacao powder
- 30 grams Maple syrup, or honey or rice malt syrup
Caramel layer
- 1 tbsp raw cacao butter
- 150 grams raw cashews soaked and drained, or blanched almonds
- 60 grams pitted dates
- 60 grams Maple syrup
- 60 grams coconut oil
- 40 grams tahini
- 1 tsp vanilla extract
- 1 pinch sea salt
white chocolate layer
- 80 grams cashew butter or almond butter
- 40 grams coconut oil
- 1 tbsp coconut nectar or maple syrup
- 1/2 tsp vanilla extract

Line a cake tin with baking paper, I used 3 7 cm cake tins.
Grind all ingredients for 20 to 30 seconds on speed 9 to 10. You may have to scrape down a few times to make sure it is all evenly ground. Spread an even layer over the bottom of the cake tin.
Puree all ingredients for 20 to 30 seconds to get a smooth mixture. Spread over the base.
Melt the cacao butter - chop into smallish chunks then put into the bowl and chop 3 seconds on speed 5. Then melt at 37 degrees for 2 minutes on speed 2.
Then add all the other ingredients and puree for 40 to 50 seconds on speed 9. You will have to scrape down a few times to make sure it is all smooth. Spread gently over the choc layer.
Puree all ingredients on speed 9 for 30 to 4o seconds, scrape down a few times to make sure it is all smooth. Spread gently over the caramel layer
Cover and chill in the fridge for a few hours before sliding out of the cake tin and use a heated knife to slice.

Tip
Soak the nuts separately for about 30 minutes. Then drain and use. Soaking the buckwheat for 10 minutes will make the base softer.
