- 160 grams short grain rice
- 450 grams coconut cream or coconut milk
- 500 grams Milk
- 80 grams castor sugar
- zest of lemon
- 1/2 tsp Vanilla Paste
- 150 grams whipped cream
- 15 grams Lime or Lemon juice

Rinse the rice in cold running water
Place rice, coconut milk, milk, zest, sugar, and vanilla paste into the Thermomix bowl.
Cook for 50 minutes at 90 Degrees reverse speed 1. Check towards the end to make sure it doesn’t become too thick.
Cool for at least 10 minutes before stirring through whipped cream and lemon or lime juice.
Spoon into serving dish and serve with a compote

Everyone is raving about this recipe but I am vegan. So what can I use instead of milk? I can use coconut yoghurt instead of the whipped cream, but I’m not sure what type of milk substitute to use in the main part of the recipe.
Love love love! Such an amazing receipe. I only had 300ml of coconut cream and put 600ml of oat milk in it. Perfect thickness for my liking. At the end I added coconut yogurt. The lime juice gives it so much freshness. Will be a new favorite 😋
This is hands down the best rice pudding I have ever eaten! I didn’t have enough coconut milk so topped up with coconut yoghurt and also didn’t have enough regular milk so topped up with almond milk. Was worried this might make it taste funny but the end result was amazing! Used coconut yoghurt at the end in place of the whipped cream too. The lemon juice takes it to another level - I’m having a second bowl as we speak, sorry kids!
I didn't have cream and used yoghurt. It was delicious. I make normal rice pudding regularly for my mun so thought I would give this a go. So glad I did. Thank you.
