S'mores Skillet Cookie
- 170 grams Butter, diced, room temperature
- 55 grams cream cheese
- 2 eggs
- 140 grams brown sugar
- 100 grams raw sugar
- 1 tsp vanilla
- 280 grams plain flour
- 1 tsp baking soda
- 1/2 tsp salt
- 200 grams dark chocolate, small pieces
- 2 eggs
- 15 marshmallows, cut in half
- 1 handful white chocolate buttons, optional

- Preheat oven to 160°C. Grease a cast iron skillet and set aside.
- Place butter (diced & at room temp) and cream cheese in mixing bowl and mix 30 sec/speed 4.
- Add 2 eggs and mix 10 sec/speed 4. Scrape down sides of bowl and repeat 10 sec/speed 4.
- Add brown sugar, raw sugar, vanilla, flour, baking soda and salt. Mix for 10 sec/speed 4. Scrape down sides of bowl with spatula. Repeat 10 sec/speed 4.
- Transfer two thirds of cookie dough to the skillet and press out evenly with wet hands to form base of cookie. Bake for 10-15 minutes until lightly golden. Meanwhile...
- Set aside remaining cookie dough in a small bowl, and clean & thoroughly dry mixing bowl. OR leave cookie dough in bowl and use a second BBL for next steps.
- Add dark chocolate chunks and chop on Turbo 2-3 times. Melt for 4 min/60°C/speed 2. Adjust time if required until chocolate is smoothly melted.
- Add 2 eggs and half of the remaining cookie dough to melted chocolate. Mix 10 sec/speed 4.
- Once base is out of the oven, spread chocolate mixture on top, almost to the edges. Take small spoonfuls of the remaining cookie dough set aside and dollop on top of chocolate layer. Scatter cut marshmallows on top and handful of chocolate buttons.
- Bake in oven, on lower or middle tray, at 160°C for another 15-25 minutes until cookie dough is biscuity, brown and marshmallows have melted gooey. Don't overcook as it will go cakey. Enjoy!
