Ingredients

  • ¼ cup Red Curry Paste ( red curry paste recipe in thermomix cookbook)
  • 2 cloves garlic
  • ¼ tsp tumeric
  • 460 mls water
  • 400 ml coconut milk
  • 500 gms diced chicken
  • 60 mls fish sauce
  • 1 tbl soya sauce
  • 2 tbl raw sugar
  • 2 tsp lime juice
  • 300 gms egg noodles
  • ¼ cup fresh coriander
  • 2 shallots
  • crunchy fried noodles and thin slice onion, (opt)

Recipe's preparation

  1. Put curry paste, garlic & turmeric into thermomix and sauté 1 min on 100 degrees on soft speed.

     

    Add coconut milk & water, bring to boil on Varoma temp for 4 mins speed 4.

     

    Add chicken & reduce heat to 80 degrees for 10 mins soft speed.

     

    Add sauces, sugar & lime juice and continue to cook for 10minsReverse, soft speed  and set aside in warming dish.

     

    Bring 600mls water to boil at Varoma temp for 8-10 mins, add noodles and cook on Reverse, softspeed for 4 mins or until soft and serve in bowl topped with Laksa and garnish.

     

    Garnish: Chop coriander & shallots for 5 secs speed 4-5. Sprinkle over noodles and laksa. Add crunchy fried noodles & fried onions if you like.
