Ingredients
- 50 grams Parmesan cheese
- 500 grams chicken breast, (cut into medium sized pieces)
- 1 egg
- 20 grams plain flour
- 1/2 tsp salt
- 100 grams breadcrumbs
- 1 egg, beaten
- oil

Grate parmesan for 10 seconds on speed 9.
Place chicken into TM bowl and mince for 30 seconds/speed 4. Add parmesan, 1 egg, flour and salt. Mix for 30 seconds/speed 4.
Divide chicken mixture into 5-6 portions. Flatten out each into a schnitzel shape (it's easier to have it fatter and smaller to begin with and you can press down on the oven tray.
Dip schnitzel into beaten egg and then roll in breadcrumbs to coat.
Place schnitzels onto a tray lined with oil-brushed baking paper. Spray top of kievs with oil. Cook in 180 degree Celsius oven for 30 minutes, turning after 15 minutes.

Delicious! I add pizza sauce and cheese on top to make a Parmi. So good
This is quite yummy. I cook for slightly less time and let the chicken rest for 5 mins before serving. Really easy midweek meal!

These were great. To add extra flavour, I blitzed a couple of cloves of garlic and a large sprig of rosemary before adding bread and making my breadcrumbs (I also used approx 800g of chicken breast so we could have some left overs). We were very happy with the result. Thanks for sharing!
These were great. I used a sprinkle of TRTLMT Tuscan Seasoning to flavour them since we couldn't use the cheese.
