Ingredients
Chicken and corn fritters
Fritters
- 2 sprigs fresh parsley, basil and chives
- 2 --- tomatoes 1/2d
- 1 --- onion, peeled and 1/2d
- 200 g cooked chicken, or any cooked meat, chopp d into large pieces
- 1 x 125 can sweet corn kernels, drained
- 1 level teaspoons chicken stock or Vegeta
Batter
- 75 g plain flour
- 75 g SR flour
- dash Salt and pepper
- 1 egg
- 240 grams Milk

- Add tomatoes, onion, herbs and chicken to the bowl and chop sp4/3-5 secs, or until chopped to your liking.
Set aside and mix through the corn.
Rinse bowl and add batter ingredients.
Combine sp4/30secs
Set aside for 30 minutes.
Return chicken mixture to the TMX bowl and combine briefly sp 3/rev/5 secs or until combined.
Heat a frypan with a splash of oil and drop spoonfuls of mixture to the pan.
Flip when brown underneath and drain on absorbent paper.
Serve with Sweet Chilli sauce and a squeeze of lemon.

Tip
A delicious meal idea which can be adapted to use any leftovers in the fridge.
Use any any sort of ( cooked ) meat or veggies.
Serve with your favourite chutney or sauce. I like Sweet Chilli.

Have been making corn meat fritters for years. Have never thought to use chicken or the thermomix. These were great and so easy. Will use this recipe also for corn meat fritters. Thanks
