Ingredients

Chunky Spaghetti Bolognese

  • 1 onion, cut in half
  • 2 garlic cloves
  • 30 g olive oil
  • 180 g red wine
  • 400 g tomato puree
  • 400 g chopped tomatoes
  • 40 g tomato paste
  • 1 tsp sugar
  • 1 beef stock cube
  • 1 bay leaf
  • fresh or dried herbs
  • 200 g fresh mushrooms, sliced
  • 500 g Beef mince
  • salt, to taste
  • pepper, ground, to taste

Recipe's preparation

  1. 1. Add onion, garlic and olive oil to mixing bowl and chop 5 secs/speed 5.
    2. Scrape down sides of mixing bowl and cook 5 mins/120 degrees/speed 1.
    3. Add red wine and cook 5 mins/80 degrees/speed 1 (without MC).
    4. Add beef stock cube, tomato puree, chopped tomatoes, tomato paste, mushrooms bay leaf, dried or fresh herbs (e.g. basil, oregano, mixed herbs), water, sugar, salt and pepper to the mixing bowl.
    5. Insert the simmering basket and place 500g mince beef into the basket.
    6. Cook 45 mins/Varoma/speed soft. Place varoma dish (without lid) or another simmering basket if you have one, onto mixing bowl lid to reduce the liquid in your bowl.
    You may like to stop the cooking around the 10 minute mark and stir the mince so it doesn't all stick together.
    7. Once desired thickness has been reached, remove simmering basket with aid of spatula and add mince to the sauce.
    8. Serve with noodles and enjoy with grated fresh parmesan cheese.

Tip

If you would like to add veges to your spag bolg (e.g. carrots, or zucchini), I would suggest chopping them before you chop the onions and then add them to the varoma - they can cook on top while the sauce is cooking and then can be added to the bowl at the end. Or if room in your mixing bowl you can add them in their with the mushrooms.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
