Ingredients

  • 100g palm sugar
  • 3x3 centimetre pieces fresh ginger
  • 3 cloves garlic
  • 1 teaspoon fennel seeds
  • 1 Small Red Chili, seeds removed
  • 100g soy sauce
  • 25g fish sauce
  • 2 lemons, juice only
  • 700g pork fillet, 1 inch cubes

Recipe's preparation

  1. Mill Palm sugar sp8/15 secs. (Will become like fudge) Set aside.

    Add ginger, chilli & fennel, chop on sp8/3 secs. Scrape down sides.

    Add soy & fish sauce, sugar, lemon juice. Cook 100 deg/sp5/ 1min30.

    Add pork, cook Rev Sp1/100 deg/ 5min.

    Serve with steamed rice, and  salad.

Tip

I usually prepare the rice first and keep in the thermo server.  Then clean & dry the bowl and make the sauce.  I let the pork "marinade" in the sauce until we're ready to eat. It takes only a few minutes to cook so its fresh and yummy.
