Ingredients
Dough
- 160 grams Bakers flour (or plain flour)
- 160 grams Self Raising Flour
- 300 grams Greek yoghurt
- 1/2 teaspoon salt
Filling
- TM Grated mozzarella, Or feta or Parmesan or any combination of lovely cheeses
- Leftover roast meats, Or left over mince meats
- Cooked vegetables or fresh spinach

Add all dough ingredients to TM bowl. Mix 12-15 sec speed 6 until a ball is formed. Knead 1.5 mins and do not walk away from your thermomix. Wrap dough in thermomat and rest for 30 mins or until your filling is ready.
Filling: chop and prepare cooked meats, VEGES and cheeses.
The meat and hard cheeses can be chopped in the thermomix. Use reverse speed 4 for shredding meats, and Speed 8 for hard cheeses.
Divide dough into 4. Roll each portion out with rolling pin on your thermomat. This is a very sticky/wet dough, so you will need extra flour to roll out. Roll each portion into large thin rectangles.
Place chosen filling along long side of rectangle and fold over to seal to make a long parcel.
Pan fry in a small amount of oil until golden on each side. Serve.

This is a great meal to use up leftovers.
If you don't have left overs, this is awesome with freshly minced chicken breast sautéed with garlic, onion, chilli and a little salt. Mix with baby spinach leaves and mozzarella and fill your gozleme.
Other ideas: Mexican mince or chilli con carne, any pie filling, steamed chicken, left over roast vegetables, ham and cheese, ham cheese and pineapple, tandoori chicken.
This recipe can be DOUBLED. Just double quantity of ingredients, no extra kneading is required and dive dough into 8 portions to roll out.

So impressed with this recipe. Found this dough so easy to work with and was able to fill the gozlemes right up, fold over and sealed well. I managed to get 8 gozlemes with this recipe. Also only had sweet honey Greek yoghurt on hand and it was still delish!. Whole fam enjoyed - will be a regular!
That was so delicious! Just searched for a recipe with chicken, spinach & cheese and this was one that came up. It was super easy to throw together and perfectly served my family of 5. Sadly no left overs as it only made 5 and we devoured them very quickly. Will definitely make these again!

use this dough recipe whenever we have left over lamb roast. Can be tricky to roll out but so easy to make.
What a fabulous idea to use a sandwich press. That would be so much easier and neater. I will have to try doing that too.

My family adored this recipe. after making the bread (which didn't seem to matter if a little thick) I added beans instead of spinach and served with greek yoghurt. Makes enough for 4 meals. Looking forward to dinner tonight. Thanks to the Thermomix - makes it all so much easier to prepare.

Terrific. I added an extra 50g plain flour. Filled with feta and spinach and drizzled with lemon juice.
Loved it super quick and easy to make. Made a double batch of dough and easily feed 6 adults 2 children served with fresh garden salad.
Yum! Made this tonight, I used lightly cooked garlic and onion mixed in with the shredded chicken, mozzerella and baby spinach. The dough was sticky and I tripled it, I used a bit of water as I ran out of yoghurt, I also added about a tablespoon of olive oil as it wasn't kneading well. The dough was lovely and easy to roll out, but like other's have said you do need a bit more flour to roll it out. I cooked it in a sandwich press and it made it really easy and ready in around 1 minute. Husband said it needed sauce, I liked it just the way it was! 10/10
